In the brief period that Ando has been open, Chef Augustin Balbi’s transformative cuisine has already attracted the attention from the likes of the Michelin Guide, earning their first star within months.

For this project, we were invited by Chef Balbi and JIA Group to create a unique celebration of the restaurant’s first anniversary.

Ando turns one.

To celebrate, JIA Group commissioned us to tell the story of Andō in a short film.

We spoke to Agustin and created a short script drawing parallels between his two passions: his restaurant and his two young children. With so much change in his life, it felt perfect to focus on the heritage and tradition from his past, such as old recipes from his grandmother which he had refined over the years. Our team shot at his home and at his restaurant over one day, splitting our time at both locations to shoot the same dish: his signature Arroz Caldoso.

At Ando, the star dish arroz caldoso is a soul-warming embodiment of the restaurant’s ideals. Agustin’s cooking may be considered by many to be fine dining, but the real luxury comes from dishes steeped in tradition and heart. Each bite serves as a delectable testament to the generations of home cooks who have honed this recipe through time.

Capsule48’s video production house focused on this dish during the production process, and highlighted how Agustin wishes to pass on this tradition to both his guests and his children.
